  • 1. Spiced minty hummus.
  • Ingredients:
  • 2 cans chickpeas (garbanzo beans), rinsed
  • 1 lemon, juiced
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • Salt to taste
  • ¼ teaspoon ground cayenne pepper
  • 1 clove of garlic, minced
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt
  • 2 tablespoons tahini, preferably raw
  • 2 tablespoons water
  • 4 tablespoons fresh mint, chopped, plus more for garnish


Directions:


In a food processor, combine chickpeas, lemon juice, salt, cayenne, and garlic. Pulse until smooth, about 15 seconds. With the motor running, drizzle in the oil until well incorporated.
